- 2 eggs
- 1 c unsweetened pumpkin
- 1 1/2 c flour
- 3 oz preserved stem ginger in -syrup
- 1/2 c brown sugar
- 1/2 c sugar
- 4 oz butter (unsalted)
- 4 oz walnuts
- 1 ts baking soda
- 1 ts ginger
- 1 ts cinnamon
- 1 ts black pepper
- 1/2 ts nutmeg
- 1/4 ts salt
in middle comes out dry. Cool cake in pan for about 15 minutes. Remove from pan and cool on rack.
