Ingredients
- 5 garlic (chopped cloves)
- 1 lb bay
- 3/4 c slivered peppers (red)
- 3/4 c slivered green peppers
- 1/2 c onion (chopped)
- 1/4 c olive oil
- 2 tb capers (drained)
- 1/2 ts tabasco pepper sauce
- 1/4 ts salt
Slivers of red and green bell peppers give this quickly prepared dish vibrant color, and the garlic, Tabasco sauce and capers provide lots of flavor. ~------------------------------------------------------------------------In a large skillet, heat the oil and add the garlic. Cook until golden, about 1 minute. Add the scallops, peppers, onion, Tabasco sauce and salt. Stirring constantly, cook for 5 minutes, or until the scallops turn white and the vegetables are crisp-tender. Stir in the capers and serve immediately.
