- 4 quart casserole over moderate hea onion
- 5 c broth
- 1 1/2 c arborio rice
- 1/2 c dry wine (white)
- 4 oz mushrooms stems removed (white)
- 1/4 c mascarpone cheese
- 5 tb butter (unsalted)
- 4 oz shiitake mushrooms
- 3/8 c onion (finely minced)
- 1/4 c parmesan cheese (grated)
- 1/4 cup broth
- 1 tb oil
- 1 tb parsley (chopped)
vigorously so cheeses melt. Sprinkle with parsley. Serve immediately.
