Ingredients
- 170 gr broccoli
- 120 ml water
- 60 ml extra-virgin olive oil
- 30 ml lime juice (fresh)
- 16 gr spinach (fresh)
- 10 gr coconut (grated)
- 2 gr cumin seeds (whole)
- 1 gr pepper flakes (crushed red)
- 1 gr salt
- 1 gr black pepper
Heat oil in non-stick frying pan over medium-low heat. Add cumin & pepper flakes & fry for half minute. Stir in lime juice, salt, pepper, vegetables & water. Cover & simmer until the vegetables are reduced to a chunky puree (45 to 60 minutes). Stir occasionally. Immediately before serving, spread about 1 tb of mixture on poppy seeds crackers, (see recipe). Sprinkle with coconut.
