Ingredients
- 2 eggs
- 300 gr confectioners sugar
- 250 gr all purpose flour
- 170 gr coconut (shredded)
- 150 gr sugar
- 130 gr mashed carrots (cooked)
- 110 gr butter
- 95 gr shortening
- 45 gr soft butter
- 9 gr baking powder
- 4 gr orange peel (grated)
- 1 gr salt
About 1 tbs orange juice I have made these cookies, and they are GREAT! They're from the Betty Crocker Recipe Card Library. Heat oven to 400. Mix shortening, sugar, eggs and carrots. Blend in flour, baking powder & salt. Stir in coconut. Drop dough by teaspoonfuls about 5 cm apart onto lightly greased baking sheet. Bake 8 to 10 minutes or until no imprint remains when touched lightly. Immediately remove from baking sheet. Cool. Frost with orange butter icing. Makes 4 dozen cookies. Orange Butter Icing: Blend butter and sugar. Stir in orange peel and juice. Beat until frosting is smooth and of spreading consistency.JM. NAFY67C@prodigy.com (DEBORAH EPSTEIN) ----
