Ingredients
- 4 egg whites
- 3 oatmeal quick
- 1 1/4 oatmeal (plus)
- 250 gr flour wheat (whole)
- 130 gr carrots shred
- 120 ml apple juice
- 110 gr brown sugar
- 85 gr corn syrup
- 85 gr dates (chopped)
- 60 ml water
- 30 ml applesauce
- 18 gr baking powder
- 10 ml water
- 5 gr egg replacer
- 2 gr baking soda
- 1 gr cinnamon
- 1 gr ginger (optional)
- 1 gr salt (optional)
Heat oven to 350 deg F.
Spray an 8 x 4 or 9 x 13 cm loaf pan with nonstick spray.
In a med. bowl, combine dry ingredients except 3 T oats; mix well.
Add liquid ingredients that have been combined in a sm bowl; mix just until moistened.
Fold in carrots. Spread evenly in prepared pan.
Sprinkle with remaining 3 T oatmeal.
Bake 1 hr and 10 min, or until it tests done. Cool 10 min; remove from pan.
Cool completely. Store tightly covered.
