- 2 egg whites
- 1 egg
- 400 gr sugar
- 280 gr all purpose flour
- 80 ml canola oil
- 60 ml nonfat yogurt (plain)
- 60 ml water
- 32 gr unsweetened chocolate
- 12 gr cocoa powd
- 12 gr vanilla extract
- 5 gr instant coffee granules
- 3 gr baking soda
- 2 gr baking powder
- 1 gr salt

In a small saucepan over low heat, mix together chocolate & oil. Stir often until smooth & set aside. Sift together flour, cocoa,baking powder, baking soda & salt. In a large mixing bowl with electric mixer on medium speed, beat egg & whites, sugar &coffee powder until very light & fluffy. Turn mixer to low &beat in half dry ingredients. Beat in yogurt, vanilla, quarter cup water,chocolate mixture & remaining dry ingredients. Beat just until smooth. Turn batter into pan. Bake 40-45 minutes or until toothpick inserted into middle comes out clean. Put on wire rack to cool completely. Invert cake onto rack & then onto serving platter. ----
