Ingredients
- 10 eggs well (beaten)
- 1 onion (chopped)
- 240 gr monterey jack cheese (grated)
- 130 gr breakfast sausage
- 130 gr unsifted flour
- 120 gr shrimp (peeled)
- 110 gr broccoli (frozen chopped thawed)
- 65 gr green chilies (chopped)
- 65 gr black olives (sliced)
- 55 gr margarine
- 40 gr mushrooms (sliced)
- 28 ml cream cheese
- 3 gr salt
- 2 gr baking powder
- 1 gr celery salt
Preheat oven to 180ºC . In a large bowl combine beaten eggs, cottage cheese, grated cheese, mushrooms, spices, onion, flour, baking powder, green chilies , black olives, and optional ingredients. Blend carefully and pour into a greased 23 cm x 33 cm baking dish or 8-cup quiche pan sprayed with non-stick vegetable cooking spray. Bake 35-45 minutes. Let stand 5 minutes before cutting and serving. Recipe may be halved and poured into a 10x6 inch pan or 23 cm quiche pan. NOTE: Reduce flour to half cup when vegetable, sausage, or shrimp are added.
