Ingredients
- 27 ozs sauerkraut
- 14 1/2 ozs tomatoes (crushed)
- 1 egg whipped (white)
- 350 ml water
- 325 gr bread crumbs (white)
- 270 gr chicken breast (ground)
- 90 gr long rice (grain uncooked)
- 60 ml skim milk
- 60 gr onions (chopped)
- 7 ml olive oil
- 1 gr black pepper
In a mixing bowl, combine egg white, milk, bread crumbs, salt, and black pepper. Add chicken and mix well. Shape into dozen meatballs. In a skillet, heat oil over medium heat. Add meatballs and cook until no pink remains in chicken. Remove meatballs from skillet. In same skillet, combine sauerkraut and onions. Stir in rice and water. Add balls and crushed tomatoes. Bring to a boil. Reduce heat and simmer, covered for 30 minutes or until rice is done.
