Ingredients
- 3 garlic (cloves)
- 2 eggs
- 1/2 fat monterey jack (reduced)
- 450 gr corn (frozen)
- 300 gr tomatoes
- 120 ml skim milk
- 90 gr onions
- 60 ml chuncky picante sauce
- 34 gr green pepper
- 32 gr all purpose flour
- 32 gr cornmeal (yellow)
- 18 gr cilantro (chopped fresh)
- 16 ml lime juice
- 1 gr chili powder
- 1 package pinto beans
-or cheddar cheese, or -some combo thereof saute the onions and pepper in a large skillet over medium heat, just until soft. stir in rest of vegetable ingredients; simmer 15 minutes or so. salt and pepper to taste. in a mixing bowl combine cornmeal crust ingredients; whisk briefly then turn in to a vegetable-sprayed pie dish. bake at 250ÂșC or 10 minutes or until puffy and brown. add vegetable mixture, then sprinkle cheese on top. bake ten minutes more or so or just until the cheese is the way you like it.
