Ingredients
- 3 eggs
- 200 gr sugar
- 200 gr powdered sugar
- 120 gr pumpkin
- 230 ml cream cheese
- 95 gr flour
- 45 gr butter
- 10 gr ginger
- 5 ml lemon juice
- 5 gr baking powder
- 5 gr cinnamon
- 2 gr vanilla
- 1 gr salt
Beat for 5 minutes the 3 eggs. Slowly add sugar,pumpkin,lemon juice, flour, baking powder,ginger,cinnamon and salt. Grease and flour a small cookie sheet (jelly roll pan) Put in the above mixture and bake at 180ÂșC or 20 minutes. SPRINKLE "cake" with powdered sugar and tip onto a linen towel. ( Sprinkle towel with P. sugar also).. Roll and refrigerate for 30 minutes. Filling: Mix together -1 c Powdered sugar, softened cream cheese, butter and vanilla Spread over "cake". Again "roll" the cake and refrigerate. Slice & Enjoy. This recipe can easily be doubled.
