Ingredients
- 8 corn tortillas (white)
- 8 husked tomatillos coarsely (chopped)
- 1 salt
- 1 prepare a wood
- 1/2 jalapeno (minced)
- 260 gr pulled bbq pork
- 120 gr monterey jack cheese (grated)
- 30 ml lime juice (fresh)
- 24 gr pork over
- 18 gr coarsely cilantro (chopped)
- 16 ml olive oil
- 7 gr onion (finely diced red)
- 5 ml honey
- 4 slices bliss potatoes (red cooked)
- 1/2 slices tortilla
- some salt and pepper
TOMATILLO SALSA Combine the tomatillos, onion, jalapeno, lime juice, cilantro, olive oil and honey in a bowl. Season with salt and pepper. Refrigerate covered, for up to 1 day. Bring to room temperature before serving.
