Ingredients

- 1 miso
- 700 ml spaghetti sauce
- 350 ml water
- 300 gr soft silken tofu
- 240 ml sauce (into)
- 190 gr seitan
- 130 gr wheat flour (whole)
- 60 gr tahini
- 60 ml oil
- 38 gr corn meal
- 7 gr maple syrup
- 5 gr italian herbs
- 1 gr salt
- 1 gr nutmeg
This is a fairly close approximation to what a parmigiana dish should be like. It is based on the mushroom stroganoff from the American Vegetarian Cookbook, and comes from Renee Wheeler.
