Ingredients

- 1 3/4 stick
- 1 egg yolk
- 170 gr sugar
- 160 gr graham cracker crumbs
- 280 ml cream cheese (room temp)
- 110 gr semisweet chocolate (chopped)
- 65 gr butter (unsalted)
- 55 ml milk chocolate (chopped)
- 50 gr butter (unsalted)
- 45 gr all purpose flour
- 32 gr unsweetened chocolate
- 30 ml whipping cream
- 14 gr sugar
- 8 gr vanilla extract
- 2 gr baking powder
- 1 gr salt
FOR CRUST: Position rack in center of oven and preheat to 350 deg. Butter 23 cm-diameter deep-dish glass pie dish. Combine graham cracker crumbs and sugar in medium bowl. Add melted butter and stir until well incorporated. Press graham mixture evenly into bottom and up sides of prepared dish. Bake until crust is set, about 5 minutes. Cool on rack. Maintain oven temperature. FOR FUDGE LAYER: Sift flour, baking powder and salt into medium bowl. Combine butter semisweet chocolate and unsweetened chocolate in top of double boiler set over simmering water. Stir until melted and smooth. Remove from over water and cool slightly.
