Ingredients
- 4 eggs
- 400 gr sugar
- 375 gr flour
- 260 gr zucchini
- 240 gr pineapple
- 240 ml oil
- 190 gr powdered sugar
- 170 gr currents
- 120 gr walnuts
- 85 ml cream cheese
- 20 gr margarine
- 9 gr baking soda
- 9 gr vanilla
- 5 gr baking powder
- 4 gr cinnamon
- 3 gr salt
- 2 gr nutmeg (ground)
- 1 gr almond flavoring
- 1 gr lemon flavoring
Beat eggs to blend, add oil, sugar and vanilla. Continue beating until thick and foamy. Stir in zucchini and pineapple. Mix remaining ingredients in a seperate bowl. Stir dry mixture gently into zucchini mixture just until blended. Bake in preheated oven at 180ÂșC or 1 hour or until toothpick inserted in center comes out clean.
