Ingredients
- 375 degree oven
- 3 bananas
- 2 egg whites
- 1 lemon (grated)
- 1/2 oat bran
- 1 1/2 c ripe banana
- 1/2 c brown sugar (light)
- 3/4 c wheat flour (whole)
- 3/4 c all purpose flour
- 1/4 c crystallized ginger
- 1/4 c golden raisins
- 2 tb brown sugar (light)
- 1 tb lemon juice
- 1 tb margarine
- 1 tb powdered sugar
- 2 ts baking powder
- 1 ts vanilla extract peel
- 1 ts ginger (ground)
- 1/2 ts baking soda
- 1/2 ts salt
to make a glaze. Immediately brush over the hot muffins. Let cool a few minutes before serving.
