Ingredients
- 1 garlic clove
- 1 lemon
- 1/2 onion (white)
- 1/2 bell pepper (red)
- 2 c black-eyed peas (cooked)
- 2 tb sambuca liqueur
- 1/4 c basil (chopped fresh)
- 1 ts balsamic vinegar
- 2 tb basil (fresh)
- 1 ts black pepper
Combine ingredients for dressing. Mix with sald ingredients & rest at least half an hour before serving. Season if desired. Adapted from "The Hamilton Spectator" August, 1993
