Ingredients
- 8 eggs
- 8 diameter
- 8 corn tortillas
- 2 tbls of vegetable oil in a skille the beans with the liquid (heavy)
- 2 tbls
- 1 clove garlic
- 1 vegetable oil
- 3/8 bean mixture on tortilla
- 1/4 vegetable oil in a another skille fry tortillas (heavy)
- 3 c water
- 1 1/2 c black beans
- 1 1/2 c ham
- 10 oz peas
- 8 oz tomatoes
- 1/2 cup cheese (shredded)
- 1/4 cup onion
- 1/4 c onion
- 2 oz monterey jack cheese
- 2 tb onion
- 1 1/2 ts salt
- 1 tsp sal
- 1/2 tsp salt
- 1/8 ts cayenne pepper
degree F oven. In the same oil fry the eggs until they are set. Season with the salt and pepper. Place an egg on the top of each bean covered tortilla. Sprinkle each with about 1/2 cup of the ham mixture. Spoon some of the tomato sauce on top and sprinkle with the cheese. Serve hot.
