- 2 garlic (cloves)
- 1 onion
- 1 green bell pepper
- 1 bell pepper (red)
- 1 zucchini
- 1/2 lime (fresh)
- 1/2 ans sliver (lengthwise)
- 15 oz black beans (canned)
- 1 1/2 lb scallops
- 15 oz baby corn
- 1/4 c salsa
- 1 tb olive oil
- 2 ts oil
- 1 ts oil in nonstick skillet
Continue to cook just long enough to heat through. Add salt and pepper to taste. Serve hot. Pass extra salsa at the table.
