Ingredients
- 4 eggs (hard cooked chopped)
- 3 garlic (cloves finely chopped)
- 1 tomato (chopped)
- 1 onion (chopped)
- 3 cups beef broth
- 3 cups water
- 1 pound black beans (dried)
- 1 cup smoked ham (cooked finely chopped)
- 1 cup green pepper (chopped)
- 1 cup onion (chopped)
- 1/4 cup dark rum
- 2 tablespoons vegetable oil
- 1 1/2 teaspoons cumin (ground)
- 1 1/2 teaspoons oregano (dried)
Cook 1 cup onion and the garlic in oil in Dutch oven until tender. Add remaining ingredients, except chopped egg and onions; heat to boiling. Boil 2 minutes; reduce heat. Cover and simmer until beans are tender, about 2 hours. Serve with chopped eggs and onions.
