Ingredients

  • 4 ripe tomatoes
  • 4 places with the tines of a fork
  • 1 1/2 vegetable exchange
  • 1 should
  • 1 fat exchange
  • 1 black pepper (fresh ground)
  • 1 vegetable -for the diabeitic
  • 1/2 high-fat meat exchange
  • 5 lb spaghetti squash
  • 2 c garlic
  • 1/2 quart microwave-safe casserole
  • 1/2 c mozzarella cheese
  • 1/4 c parmesan cheese
  • 1/4 c scallions
  • 5 t olive oil
  • 1 t olive oil on a microwave-safe (plate)
  • 1 t salt
