Ingredients
- 40 bamboo skewers
- 7 seeded chilies (dried)
- 3 from the root
- 2 1/2 galanga
- 2 cilantro roots
- 1 1/2 lemon grass
- 5 c consistency coconut
- 2 lb pork
- 3/4 c coconut milk (thick)
- 3/8 c creamy peanut butter
- 1/4 c sugar
- 5 1/2 tb onions (red)
- 4 tb garlic
- 2 1/2 tb sugar
- 1 1/2 tb lemon grass
- 2 tb coriander seeds (ground)
- 4 ts salt
- 1 tb indian curry powder (yellow)
- 1 1/2 ts thai shrimp paste
- 1 ts coriander seeds (ground)
- 1 tb kaffir lime leaves
In a blender or food processor, grind the listed ingredients, from lemon grass to salt, finely. Mix with the meat (wear latex gloves to do this, it stains) and marinate for 1 hour.
