Ingredients
- 15 hominy
- 8 garlic (cloves chopped)
- 3 stalks celery
- 1 veggie chili (very)
- 1 recipe by bon appetit
- 1 categories chili main dishes vegetables
- 1 onion (chopped)
- 1 green pepper choppped
- 16 oz cans pinto beans
- 14 1/2 oz cans mexican-style stewed tomatoes
- 11 oz kernel corn (whole)
- 1 cup cilantro (fresh chopped)
- 4 oz green chilis (diced)
- 3 tablespoons vegetable oil
- 1/4 cup chili powder
- 1 tablespoon cumin (ground)
Heat oil in heavy Dutch oven over high heat. Saute celery, onion, bell pepper & garlic until they begin to soften...about 8 minutes. Add all remaining ingredients except cilantro & simmer, about 35 minutes. During last 10 minutes, add cilantro.
