Ingredients
- 1 garlic clove (minced)
- 1 parsley (minced)
- 375 ml low-fat evaporated milk
- 475 ml low-salt chicken broth
- 180 gr corn kernels (frozen thawed)
- 150 gr potatoes (diced)
- 130 gr alaska salmon (canned)
- 130 gr carrots (diced)
- 60 gr onions (chopped)
- 50 gr celery (chopped)
- 45 gr broccoli (chopped)
- 28 gr margarine
- 1 gr thyme
- 1 gr black pepper
Drain and flake salmon, reserving liquid. Saute onions, celery and garlic in margarine. Add potatoes, carrots, reserved salmon liquid, chicken broth and seasonings. Simmer, covered, 20 minutes, or until vegetables are nearly tender. Add broccoli and cook 5 minutes. Add flaked salmon, evaporated milk and corn; heat thoroughly.
