Ingredients
- 32 spinach leaves
- 6 wholewheat tortillas
- 4 salsa (hot)
- 475 gr black beans
- 60 gr soy cheese
- 40 gr tomato (chopped)
- 26 gr cilantro (chopped)
- 12 slices black olives
Mash beans. Stir in tomato, cilantro & olives. Spread evenly onto 4 tortillas. Sprinkle with cheese, spinach & salsa. Top with remaining tortillas. Preheat oven to 180ÂșC . Bake tortillas on ungreased cookie sheet for dozen minutes. Cut into wedges & serve. "Vegetarian Times" July, 1993
