Ingredients
- 5 granola (finely ground)
- 5 arrowroot powder
- 1 dry soyagen
- 1/2 dry fructose
- 900 gr strawberries (fresh)
- 600 gr tofu
- 240 ml soymilk
- 240 ml water
- 180 ml apple juice concentrate
- 110 gr soy margarine
- 120 ml refined soy oil
- 14 gr vanilla extract
- 3 gr almond extract
Blend granola and margarine together in bowl. Spread in oiled pie plate and bake at 180ºC for 5 min. Blend filling ingredients in blender until smooth. Pour into pie crust. Bake at 180ºC for 20 min. Mix half c of juice concentrate with arrowroot. Simmer strawberries with quarter c of juice concentrate. Add arrowroot mixture and simmer for 15 min more. Pour topping over cheesecake and cool before slicing.
