Ingredients
- 2 garlic (cloves)
- 1 onion (chopped)
- 1 bell pepper (red diced)
- 1 chicken breast (boneless)
- 950 ml homemade chicken broth
- 160 gr tomatoes (chopped)
- 120 gr rice (cooked)
- 80 ml lime juice (fresh)
- 65 gr cilantro (fresh chopped)
- 60 ml lemon juice
- 14 gr vegetable
- some cilantro
In large saucepan, heat oil and saute onion, garlic and bell pepper until softened and fragrant several minutes. Add the chicken broth; bring to a boil. Add the fresh lime or lemon juice, chicken and rice and bring back to a boil. Add tomatoes and cilantro, then turn off heat immediately. Taste and add salt and pepper if desired.
