Ingredients
- 16 pea pods
- 1 garlic clove
- 1 bell pepper (red)
- 475 gr rice (hot cooked)
- 60 ml lemon juice
- 18 gr onion (minced)
- 16 ml olive oil
- 2 gr leaf thyme (dried)
- 1 gr oregano leaves (whole)
- 1 gr pepper flakes (red)
- 1 package spam luncheon meat
Combine first 7 ingredients in 9x12 inch dish. Wrap pea pods around pineapple chunks. Alternately thread SPAM cubes, pineapple chunks, and bell pepper pieces on eight skewers. Place in dish with marinade. Cover and marinade 2 hours, turning occasionally. Grill kabobs over medium-hot coals 10 minutes, turning occasionally. Or, broil 13 cm from heat source 8-10 minutes, turning occasionally. Serve with hot cooked rice.
