Citrus Chicken

• 1 garlic clove (finely chopped)
• 1 lemon zest (finely grated)
• 1 orange zest (finely grated)
• 110 gr pickling onions
• 90 gr chicken breast fillets with skin on
• 150 ml chicken stock (fresh)
• 45 ml orange juice
• 45 ml lemon juice
• 30 ml vegetable oil
• 30 ml clear honey

Pickled Onions

• 1 peppers (hot red)
• 1 bay leaves
• 1,900 gr pickling onions
• 1,200 ml vinegar (white)
• 130 gr pickling salt
• 16 ml mustard seeds (white)
• 10 gr horseradish
• 6 gr peppercorns
