Ingredients
- 3 garlic (cloves)
- 2 onions
- 1 celery
- 1 bay leaf
- 1 chicken
- 1/2 butter
- 1/4 tabasco
- 1 pound ham
- 1 pound smoked sausage
- 2 cup rice
- 1 cup green pepper
- 1 cup onion
- 1/4 cup green onion
- 3/4 cup parsley
- 2 teaspoon salt
- 1/4 teaspoon thyme
- 1/2 teaspoon pepper
- 1 package tomato paste
Put chicken, 1 onion, (cut in half), celery and 1 garlic clove in pot.
Cover with water. Cook for approximately 1 hour or until chicken istender. Cook 2 cups of rice in 5 cups chicken broth (20 to 25 minutes oruntil liquid is absorbed.) Debone chicken and cut sausage into 1/2 inchcubes. Fry sausage and ham in Dutch oven until lightly browned. Removemeat from pot and add margarine. Saute 1 chopped onion, pepper and 1/2 cupchopped parsley until tender. Add chicken, sausage and ham to vegetables.
Stir in 2 minced garlic cloves, tomato paste, bay leaf, thyme, salt pepperand Tabasco. Add cooked rice and mix thoroughly. Simmer over low heat for15 minutes. Stir frequently. Remove bay leaf and toss in 1/4 cup choppedparsley and 1/4 cup chopped green onion tops.
