- 12 phyllo dough sheets
- 2 garlic (cloves minced)
- 1 onion (chopped)
- 1 phyllo sheet at a time
- 3 c rice (cooked)
- 1 lb chicken (ground)
- 1 c nonfat low-salt ricotta
- 1 cup rice mixture on one end of phyllo
- 1 c mushrooms (chopped fresh)
- 10 oz spinach (chopped)
- 2 1/4 oz black olives (sliced drained)
- 1/4 c pine nuts (toasted)
- 1 ts lemon pepper
- 1 ts oregano (ground)
Fold left bottom corner over mixture; forming a triangle. Continue folding back and forth into triangle to end of strip. Repeat with remaining phyllo and rice mixture. Place triangles, seam side down, on baking sheet coated with cooking spray..Coat top of each triangle with cooking spray...Bake at 400 15 to 20 minutes or until golden brown...
