  • 1 onion
  • 1 pancetta extra virgin olive oil
  • 3/4 ditalini
  • 21 c chicken broth parmigiano reggiano cheese measures (hot freshly grated)
  • 21 c chicken broth
  • 1 c dry beans (white)
  • 3/4 c ditalini
  • 1/4 c dry wine (white)
  • 3 1/2 oz cotechino italian sausage
  • 3/8 c italian tomatoes (canned peeled)
  • 1 pn oregano
  • some garlic

Serve the cheese in a separate bowl so that each person can garnish their soup with it to taste.
