- 5 from bell pepper (thin)
- 2 bell pepper (yellow)
- 2 garlic (cloves)
- 2 baking dish
- 2 chiles (ground red)
- 1 lge onion
- 1 egg
- 1 tomato
- 1 butternut
- 4 quart dutch oven over heat
- 3 quart shallow casserole
- 1 lb pork loin (boneless)
- 1 c sour cream
- 1 c beef broth
- 5/8 c milk
- 1 c kernel corn (whole)
- 1/2 lb bulk chorizo sausage
- 1/2 c flour
- 1/2 c cornmeal (yellow)
- 1/4 c oil
- 2 1/4 oz ripe olives (sliced)
- 2 ts baking powder
- 1/2 ts baking soda
- 1 tb basil leaves (dried)
- 1/2 ts salt
- 1 tb cilantro leaves (dried)
Topping over meat mixture. Carefully spread to cover, sealing to edge of dish. Arrange reserved bell pepper slices on top. Bake until topping is golden brown, 15 to 20 minutes. Serve with Fresh Tomato Salsa.
