Ingredients
- 2 garlic (cloves peeled)
- 1 rib celery
- 2 lb yukon gold potatoes
- 2 c smokey turkey (diced)
- 5/8 c olive oil
- 5 tb lemon juice (fresh)
- 1/4 c cilantro (finely chopped)
- 3/8 c parsley (finely chopped)
- 1/2 ts salt
- 1/2 ts black pepper (freshly ground)
- 1/2 ts cumin (ground)
- 1/4 ts cayenne pepper
- 1/4 ts paprika
artichoke hearts, green olives and celery. Mix with the dressing and refrigerate until ready to use. Note: For a vegetarian salad, omit the smoked turkey.
