Ingredients
- 5 eggs
- 2 1/2 loaf pans with paper
- 1/2 extend above all
- 2 c sifted enriched flour
- 1 c sugar
- 1 c shortening
- 2 c flaked coconut
- 1/2 c apricots (dried)
- 1/2 c unsweetened pineapple juice
- 1/2 cup over fruit mixture
- 1/2 c figs (dried)
- 1/2 c pitted dates
- 1 1/2 ts baking powder
- 1 ts rum flavoring
- 1 ts salt
sides of pan. (Or bake in smaller pans.) Pour batter into pans, filling 3/4 full. Bake in very slow oven (275�) 2 1/2 hours or till done. (Have pan of water on bottom shelf of oven while baking.) Makes about 5 pounds.
