Ingredients
- 5 eggs
- 2 1/2 loaf pans with paper
- 1/2 extend above all
- 250 gr sifted enriched flour
- 200 gr sugar
- 190 gr shortening
- 160 gr flaked coconut
- 140 gr apricots (dried)
- 120 ml unsweetened pineapple juice
- 100 gr over fruit mixture
- 75 gr figs (dried)
- 75 gr pitted dates
- 7 gr baking powder
- 5 gr rum flavoring
- 3 gr salt
sides of pan. (Or bake in smaller pans.) Pour batter into pans, filling 0.75 full. Bake in very slow oven (275�) 2.5 hours or till done. (Have pan of water on bottom shelf of oven while baking.) Makes about 5 pounds.
