Ingredients
- 80 chocolate has melted
- 14 logs
- 5 eggs
- 2 lemon zest
- 2 orange zest
- 2 walnut (pieces)
- 1 additional egg yolk
- 5/8 in stainless steel bowl
- 1/2 chunks
- 3/8 full of water
- 270 gr sugar (white)
- 250 gr cake flour
- 250 gr bittersweet
- 210 gr bread flour
- 65 gr butter (unsalted)
- 7 gr anise seeds
- 2 gr baking powder
- 1 gr baking soda
- 1 gr anise extract
Do not let temperature of chocolate drop below 88 degrees on candy thermometer. If so, place bowl over saucepan of warm water and continue stirring. Stir until chocolate is smooth and glossy. Have clean sheet of waxed paper nearby. Dip half of each cookie in chocolate. As cookie is removed, scrape top and bottom against side of bowl to remove excess chocolate.
