Ingredients
- 8 tree ears
- 3 pads tofu
- 100 gr scallions (chopped)
- 100 gr peas (cooked fresh)
- 30 ml peanut oil
- 16 ml wine vinegar (red)
- 16 gr ginger (finely chopped)
- 14 gr garlic (finely chopped)
- 4 gr sugar
- 5 ml sesame oil
- 3 gr chilies (hot)
Cut tofu into 1 cm cubes. Soak tree ears in warm water till soft. Drain & chop coarsely. Heat oil in a wok & when very hot add ginger, garlic & scallions. Add tofu, stirring quickly. Add tree ears, chilies & peas. Stir. Add sugar & vinegar & toss. Spoon mixture into a serving dish & sprinkle with sesame oil. Serve over rice.
