- 16 pearl onions
- 4 sprigs oregano
- 4 sprigs thyme
- 2 squash (yellow)
- 1 bay leaf
- 700 gr chicken (pieces)
- 300 gr potatoes (new)
- 260 gr zucchini
- 260 gr carrots
- 130 gr kielbasa
- 60 ml olive oil
- 18 gr garlic
- 4 gr seasoned salt
- 3 gr cumin (ground)
- 1 gr pepper flakes (red)
- 3 packages chicken broth
- 1 package hunts tomato paste
- 1 package hunts tomatoes (whole)
- 1 package kernal corn (whole)
Cilantro; chopped In a bag, coat chicken with quarter cup flour. Bone chucken in Dutch oven in hot oil; remove and set aside. Drain drippings, except 1 tsp, from pot. Saute 1 Tablespoon flour and garlic in drippings 30 seconds. Stir in next 10 ingredients starting with chicken broth and ending with red pepper flakes. Bring to a boil, reduce heat and simmer, uncovered, 20 minutes. Add chicken and Kielbasa, cover and simmer 20 minutes longer. Skim excess fat. Add vegetables, simmer, covered, 30 minutes longer. Sprinkle with cilantro before serving.
