Ingredients
- 1 1/2 candied fruit (diced)
- 1 egg
- 1 candied cherries
- 170 gr packed dark brown sugar
- 130 gr all purpose flour
- 120 ml apple juice
- 120 gr walnuts (chopped)
- 110 gr brandy any flavor
- 85 gr raisins
- 75 gr butter
- 1 gr baking soda
- 1 gr nutmeg
Marinate fruits and raisins in brandy or juice overnight. Cream sugar, butter and eggs. Sift dry ingredients together; stir in. Mix in nuts and marinated fruits. Spoon batter into 4 cm mini-muffin tins lined with baking cups. Fill 0.75 full. Top each with a cherry or walnut garnish. Bake at 150ÂșC . 30 minutes. Remove from tins; brush tops with brany or juice while warm. Cool; store in air tight container. Before serving, brush tops with jelly.
