Ingredients
- 500 gr tofu (diced baked)
- 300 gr tomatoes (chopped fresh)
- 60 gr onions (diced red)
- 60 ml water
- 60 ml extra-virgin olive oil
- 4 gr oregano (dried)
- 3 gr parsley (finely chopped fresh)
- 2 gr basil (chopped fresh)
- 2 gr salt
- 1 gr paprika
- 1 gr black pepper (freshly ground)
firm tofu Combine all the ingredients in a casserole dish and mix well. Cover and bake in a preheated 220ÂșC oven for 45 minutes. Yield: 2 servings. PERSONAL NOTE: I have no idea what is meant by baked tofu, and could find no reference to it in the Index.
