Ingredients
- 1 egg
- 180 ml milk
- 240 ml buttermilk pancake mix
- 110 gr cheddar cheese (shredded)
- 60 gr onion (chopped)
- 45 gr carrot (shredded)
- 32 gr almonds (sliced)
- 26 gr celery (chopped)
- 20 gr parmesan cheese (grated)
- 16 ml oil
- 1 package cream of chicken soup
Heat oven to 375'F. In large saucepan, combine first 7 ingredients. Cook and stir until cream cheese is melted. Stir in SPAM and broccoli; heat thoroughly. Pour into 2 litre casserole. In medium bowl, combine pancake mix and Cheddar cheese. In small bowl, stir together milk, egg and oil. Add to pancake mix; stir until combined. Spoon topping over SPAM mixture. Sprinkle with almonds. Bake 20-25 minutes or until topping is golden brown.
