Charcoal Grilled Shiitakes
- 8 shiitakes
- 1 tamari
- 16 ml olive oil
- 8 gr garlic
- 7 gr maple syrup
- 5 ml sesame oil
- 3 gr rosemary
Clam Stew With Shiitakes, Cinzano, Chorizo
- 24 littleneck clams
- 1 onion in (red)
- 1 baguette
- 1 bunch thyme
- 1/2 dice
- 1/2 shiitakes
- 1/2 chorizo thinly (cooked sliced)
- 1/2 cinzano rosso sweet vermouth
- 350 ml basic tomato sauce
- 300 ml dry wine (red)

- 2,400 ml chicken stock
- 250 gr shrimp shelled
- 240 gr arborio rice
- 130 gr scallops
