Ingredients
- 400 degree oven
- 8 chicken breasts (halved)
- 4 zucchini
- 1 halfway through the baking of the breasts
- 1 flour for dredging
- 1 lime zest (grated)
- 3 cups leeks
- 1/2 cup dry wine (white)
- 1/2 cup olive oil
- 3/4 c rich chicken stock
- 3 tbsp lime juice (fresh)
- 3 tbsp slivered sundried tomatoes (finely)
- 2 tablespoons olive oil to an oven proof saute (pan)
- 2 tablespoons olive oil
- 1 tablespoon slivered garlic (finely)
- 2 tbsp parsley (fresh minced)
- 1 slice zucchini flowers if available (garnish sliced lengthwise)
- some salt and pepper
- some leeks mixture on top of breasts
To serve: Arrange zucchini attractively on warm plates and top with breasts and vegetables. Drizzle pan juices over. Garnish with zucchini flowers. Serve hot or at room temperature.
