Ingredients
- 400 degree oven
- 8 chicken breasts (halved)
- 4 zucchini
- 1 halfway through the baking of the breasts
- 1 flour for dredging
- 1 lime zest (grated)
- 270 gr leeks
- 120 ml dry wine (white)
- 120 ml olive oil
- 180 ml rich chicken stock
- 45 ml lime juice (fresh)
- 30 gr slivered sundried tomatoes (finely)
- 30 ml olive oil to an oven proof saute (pan)
- 30 ml olive oil
- 8 gr slivered garlic (finely)
- 3 gr parsley (fresh minced)
- 1 slice zucchini flowers if available (garnish sliced lengthwise)
- some salt and pepper
- some leeks mixture on top of breasts
To serve: Arrange zucchini attractively on warm plates and top with breasts and vegetables. Drizzle pan juices over. Garnish with zucchini flowers. Serve hot or at room temperature.
