- 3 cups unbleached all-purpose flour
- 1 pound carrots (peeled)
- 1 pound cream cheese at room temperature
- 8 ounce unsweetened (crushed)
- 1 cup corn oil
- 1 1/2 cups coarsely walnuts (chopped)
- 1 1/4 cups butter at room temperature (unsalted)
- 1 tablespoon lemon juice (fresh)
- 1 tablespoon baking soda
- 1 tablespoon vanilla extract
- 2 teaspoons vanilla extract
- 1 tablespoon cinnamon (ground)
- 1 teaspoon salt
