Carrot Cake With Lemon Frosting

  • 3/4 frosting over i top with cake (second)
  • 5 cups powdered sugar sifted
  • 2 1/2 cups sugar
  • 3 cups unbleached all-purpose flour
  • 1 pound carrots (peeled)
  • 1 pound cream cheese at room temperature
  • 8 ounce unsweetened (crushed)
  • 1 cup corn oil
  • 1 1/2 cups coarsely walnuts (chopped)
  • 1 1/4 cups butter at room temperature (unsalted)
  • 1 tablespoon lemon juice (fresh)
  • 1 tablespoon baking soda
  • 1 tablespoon vanilla extract
  • 2 teaspoons vanilla extract
  • 1 tablespoon cinnamon (ground)
  • 1 teaspoon salt
