Ingredients
- 10 bean sprouts (fresh)
- 6 lengths
- 4 eggs
- 1 chile (minced fresh hot)
- 1/8 wide
- 1 lb flat rice noodles
- 3/4 c fish sauce
- 8 oz pork (boneless)
- 8 oz sized shrimp
- 1/2 c vegetable oil
- 30 tablespoon secon push the noodles to one side
- 6 tb soy sauce
- 1/4 c catsup
- 1/2 c dry peanuts (chopped roasted)
- 1/4 cup peanuts
- 1/4 c cilantro shrimp cilantro sprigs lemon (chopped fresh finely minced dried)
- 2 tb sugar
- 4 ts rice wine vinegar
- 4 ts high-quality paprika
- 2 ts chili (ground dried red hot)
- 3 slices green onions
Sprinkle with the chopped cilantro, remaining 1/4 cup peanuts, and dried shrimp. Garnish with the remaining bean sprouts, cilantro sprigs, and lemon or lime wedges, and serve immediately. Diners squeeze lemon or lime juice to taste. Serves 8 as a pasta course, or 4 as a main course
