- 10 bean sprouts (fresh)
- 6 lengths
- 4 eggs
- 1 chile (minced fresh hot)
- 1/8 wide
- 230 gr flat rice noodles
- 180 ml fish sauce
- 130 gr pork (boneless)
- 120 gr sized shrimp
- 120 ml vegetable oil
- 110 gr secon push the noodles to one side
- 90 ml soy sauce
- 60 ml catsup
- 65 gr dry peanuts (chopped roasted)
- 50 gr peanuts
- 32 gr cilantro shrimp cilantro sprigs lemon (chopped fresh finely minced dried)
- 26 gr sugar
- 20 ml rice wine vinegar
- 9 gr high-quality paprika
- 6 gr chili (ground dried red hot)
- 3 slices green onions
Sprinkle with the chopped cilantro, remaining quarter cup peanuts, and dried shrimp. Garnish with the remaining bean sprouts, cilantro sprigs, and lemon or lime wedges, and serve immediately. Diners squeeze lemon or lime juice to taste. Serves 8 as a pasta course, or 4 as a main course
