Ingredients
- 5 eggs
- 1 filling
- 750 gr strawberries (whole)
- 475 gr cottage cheese
- 400 gr sugar
- 240 gr fine rusk crumbs
- 240 ml cream (heavy)
- 65 gr flour
- 60 ml orange juice
- 45 gr melted butter
- 38 gr sugar
- 32 gr cornstarch
- 30 ml lemon juice
- 12 gr orange rind
- 4 gr lemon rind
- 2 gr vanilla
- 2 gr cinnamon
Combine crust ingredients and press into a 23 cm springform pan and bake 180ºC or 10 minutes and cool. For filling: press cheese through sieve into a bowl. Add eggs one at a time. Beat in flour and sugar. Stir in rind and juice and vanilla. Whip cream and fold in. Pour into crust. Bake 350 1 hour and 10 mins or until set. Cool and chill. For topping: Blend berries to puree. add sugar and cornstarch with juice and rind. Cook thick and clear. Place whole berries over chilled cake. Pour on warm glaze and chill until set. ----
