Ingredients
- 2 eggs
- 250 gr sifted all-purpose flour
- 230 gr quick-cooking oats
- 220 gr packed brown sugar
- 200 gr granulated sugar
- 190 gr shortening
- 120 gr walnuts (chopped)
- 80 gr flaked coconut
- 5 gr baking powder
- 5 gr baking soda
- 2 gr vanilla
- 1 gr salt
Recipe by: St. Louis Post-Dispatch 0.0625 Preheat oven to 375 degrees. Sift together flour, 1 cup granulated sugar, baking powder, baking soda and salt in a large bowl. Set aside. Combine brown sugar, shortening, eggs and vanilla; beat well with an electric mixer. Stir into flour mixture. Stir in oats, walnuts and coconut. Dough will be slightly dry. Roll dough into small balls; dip tops in granulated sugar. Place on ungreased cookie sheet. Bake for dozen to 14 minutes. Let cookies remain on cookie sheet 1 to 2 minutes before removing to wire rack. Tester's note: Crisp, old-fashioned cookies with a crackled sugar top.
